If it didn’t come in a blue and yellow box, I wasn’t making it. The trick to getting me out of take out daily and into the kitchen was finding recipes that were quick, easy, and oh so yummy!
Whether you’re a seasoned vegetarian, looking to cut down on your meat consumption, or simply need some dinner inspo, I’ve got you covered! These recipes are some of our tried-and-trues and are easily adaptable to fit additional dietary restrictions.
1. The Best Ever Veggie Enchiladas
Seriously, these enchiladas are truly the best ever!! We swap for vegan dairy products and use flour tortillas, but the recipe is delicious with whatever you use.
2. Mushroom Lentil Stew Over Mashed Potatoes
This recipe is a favorite, especially in colder months. It’s a great comfort-food dish that doesn’t weigh you down. Sometimes we add corn or other favorite veggies.
3. The Best Vegan Mac ‘N’ Cheese
Another total win from The Minimalist Baker – seriously EVERYTHING from that site is a win! – this recipe is what made me truly not miss my beloved mac n cheese when I reduced/cut out dairy last year. If you’re not GF, you can use any noodle you’d like.
4. Black Bean Burgers
These burgers make me say “mmmm THIS IS SO GOOD” with literally every bite – seriously, ask my husband 😂 They also reheat really well, meaning that yumminess can carry over for lunch the next day.
5. Vegetarian Quinoa Chili
A crowd pleaser that we love to make for gatherings, we get asked for this recipe every single time we make it. We love topping with dairy-free cheeses, avocado or crushed up tortilla chips.
